Processing of grapes into cognac wine materials is carried out according to the requirements for processing grapes for white table wines, but without application of sulfurous acid or its substitutes.

it is defined by order of the Department of 27 December 2017 № 702, which comes into force six months after its official publication.

the Approved Rules define the order of cognac production in Ukraine and are mandatory for the preparation of technological instructions, control of cognac production by all business entities.

cognac wine Materials used in the technological process of cognac production in Ukraine, which meet the requirements of standards, should be without third – party and specific tones and flavors, color-from light straw to pink. It is allowed to use cognac wine materials with a volume fraction of yeast precipitation of no more than 3 %.

For the production of cognac wine materials use the must-drift and press fractions in the total number of not more than 60 gave from 1 ton of grapes.

Press fractions of wort II and III pressure from the production of champagne, sparkling and varietal wine materials are used for the production of varietal mixed wine materials for the production of ordinary cognacs of Ukraine, provided that the physical, chemical and organoleptic characteristics they meet the requirements of standards.

cognac Wine materials distilled in time to April 1 following the harvest of grapes of the year. Deviationfrom this term is allowed to July 1 by decision of the head of the relevant business entity.

for the production of branded cognacs of Ukraine are used varietal wine materials cognac produced from grapes of certain varieties or their mixture with sugar content in the wort at least 150 g/dm3. Use for the production of branded cognacs of Ukraine varietal mixed wine materials cognac is allowed if they meet their physical and chemical indicators varietal.

for the production of ordinary cognacs of Ukraine it is allowed to use mixed cognac wine materials produced from a mixture of grape varieties with sugar content in the wort of at least 120 g/dm3.

allowed processing of wine brandy table grape varieties at a mass concentration of titrated acids in the wort is not less than 5 g/dm3 and a mass concentration of sugars not less than 120 g/dm3 with further use of these wine materials exclusively for the manufacture of ordinary cognacs Ukraine.

it is Defined that the term” white method of production of wine materials ” means a method of production of wine materials without insisting the wort on the pulp.

the following types of treatments are allowed during the production of cognacs in Ukraine

– gelatin pasting with food, fish glue, protein from chicken food eggs and other authorized materials

– warm and cold

– filtration through special fabrics, filter cardboard, plates, membranes, diatomite, diatomaceous earth and other means permitted by standards

– the introduction of oxygen in the alcohols of cognac during the reservoir aging.

the Document defines an exhaustive list of operations prohibited in the production of cognacs.

depending on the origin of cognac alcohol, the method and duration of its aging cognacs of Ukraine are divided into ordinaryand branded.

Ordinary cognacs of Ukraine are made from cognac spirits aged at least 3 years, and are divided into

Ukrainian cognacs “three stars” – from cognac spirits aged not less than 3 years;

cognacs of Ukraine “four stars” – from alcohols of cognac middle age not less than 4 years of aging;

cognacs of Ukraine” five stars ” – from alcohols of cognac middle age not less than 5 years of aging.

in the annexes to the Rules defined physico-chemical indicators of wine materials cognac, cognac spirits young; organoleptic and physico-chemical indicators of cognacs of Ukraine.
